Vest ratings

Can anyone explain the actual graded differences that are used to rate vests? I currently am wearing a basic (Gall's brand) level II vest. I know that from the level II vest desgination that the better the grade and protection the better the vest. However, what is a type II vest supposidly resitant to?

To get NIJ certification, they all have to pass the same tests. The Gall's vest are not actually made by Gall's anyway. If I remember correctly, they're made by Safariland.
