So NYPD does general law enforcement, and NYCDOC does the jails, so what does the sheriff do? Court security? Warrant service?

Civil law enforcement, such as collection of unpaid taxes, enforcement of unpaid environmental fines, and seizure of property and evictions. There's about 150 Deputy Sheriffs in NYC.

NYS Court Officers handle court security in NYC, and the NYPD handles serving warrants.

They also enforce Family Court orders.
The official NYC collection agency.
(forget to pay a parking ticket, see who tows your car, NYC Sheriff or NYC Marshall)

That list is moving really slow, but that was expected. They only hire about a handful of guys - that's it. These were the last 2 updates in the Chief under "City Certifications":
9/26/2008 Deputy City Sheriff — 35 eligibles between Nos. 20 and 329 on List 5061 to replace 4 provisionals in Department of Finance.
8/15/2008 Deputy City Sheriff — 30 eligibles between Nos. 7 and 43 on List 5061 to replace 3 provisionals in Department of Finance.

Don't hold your breath on it. I haven't heard anything about them hiring more deps.
